Moon of the Sacred Time

Both the final moon of one yearly cycle and the beginning moon of the next cycle, it is a time for renewal and rebirth. It is also a time for learning spiritual and cultural traditions from elders. Sea-run cutthroat trout, blackmouth salmon and steelhead are fished while waterfowl and game are hunted. Tools needed for the following seasons are constructed along with other essential items.

With the New Year comes the addition of new savory items. All new items are freshly caught from the local area and prepared by our highly talented chefs. Pan seared and topped with a caper lime beurre noisette, Line Caught Ling Cod, a favorite among the daily specials, has found a place on the regular menu. Wild Chinook salmon, provided by local Native Catch, has also been added. Taking full advantage of our exhibition kitchen’s Alder wood grill, this dish is cooked to perfection and accompanied with deep, full rounded citrus flavors. Remember to save room!
